- 2 eggs
- 1/2 cup walnuts
- 1/2 cup unsweetened original pea milk
- 1/4 cup + 1 T walnut butter
- 1/4 cup + 2 T peanut butter
- 1/4 cup Extra Virgin Coconut Oil
- 4 T vanilla stevia syrup
- 1/2 cup pea protein powder
- 1/4 cup cacao powder
- 1/2 tsp baking powder
- 1/2 tsp salt
- Cacao rounds
- Peanut butter
- Coconut cream
- Whole walnuts
- Preheat oven to 375 degrees.
- In a powerful blender (I use a vitamix), blend eggs, walnuts, pea milk, walnut butter, peanut butter, coconut oil and vanilla stevia syrup
- In a separate bowl, combine all the remaining dry ingredients (protein powder, cacao powder, baking powder, salt). Scoop the mixture from the mixer into the dry ingredient bowl and mix well to create the batter
- Spoon the batter evenly into greased muffin tin; press 1 cacao nib round into the center of each muffin, then push some of the batter over top of it to cover it up
- Bake for approximately 10 minutes, let cool (or not if you simply can’t wait to indulge), top with your favs, and enjoy!
